So far, the best muffins I have ever made. Cranberries have it all, they are delightful, slightly tart and can be used in a sweet or savory dish. American Heritage Historic Chocolate has many of the same taste characteristics as cranberries.
Did you know that cranberries were used as a clothing dye and food by the Native Americans? They introduced them to the English settlers and the first recipe for a cranberry sauce appears in a Pilgrim cookbook in 1663, Move over pumpkin spice, cranberries are the true New England fall fruit!
Cranberry Chocolate Muffins
Preparation Time: 15 minutes
Baking Time: 20 minutes
2 Medium mixing bowl
Small microwavable bowl
Measuring cup and spoons
Muffin pan and muffin baking cups
2 cup flour
1 cup sugar
2/3 cup of American Heritage Historic Chocolate Drink Mix (Melted)
1 teaspoon baking soda
1 cup plain yogurt
½ cup milk
1 teaspoon vanilla extract
½ cup vegetable oil
½ cup cranberries
Preheat oven to 400 degrees.
Grease muffin cups or line with muffin baking cups
Melt chocolate drink mix in small microwavable bowl for 1 minute, stir thoroughly until smooth and creamy, Set aside.
Combine flour, sugar, and baking soda in a mixing bowl.
Whisk egg, yogurt, milk, vanilla, and vegetable oil in another bowl until well blended.
Pour yogurt mixture into flour and stir until batter is just smooth.
Add melted chocolate to batter and stir.
Fill prepared muffin cups 3/4 full and sprinkle with fresh cranberries
Bake in preheated oven until a toothpick inserted into the center comes out clean, about 20 minutes
Cool in the pans for 10 minutes before removing to cool completely on a wire rack.
My son talked me into purchasing a silicone muffin pan and I’m glad he did. It worked fabulously. No more paper muffin baking cups or greasing the pan, the muffins popped right out after cooling. Rob also suggested using broken up pieces of the American Heritage Chocolate Stick instead of the cranberries in the muffins. However, you make them, this recipe is truly scrumptious! The cranberries burst while baking for a tangy sweetness that will have you craving for more. Very moist and full of chocolate and cranberry goodness! Even better the next day.
