The big football game day is just a short pass away and Black Bean Chili, Nachos, Dip or Hummus has been the kickoff to many football party menus. How about going the extra yard and trying Black Bean Football Brownies? The black beans are high protein and mixed with chocolate creates the ultimate healthy football comfort food. Black Bean Football Brownies

Preparation Time: 15 minutes
Bake 25-30 minutes
Preheat the oven to 350°F.
1 (15 oz) can black beans
1 cup vegetable oil
4 large eggs
1 cup of American Heritage Historic Chocolate Drink Mix (melted)
1 1/3 cup sugar
4 tsp vanilla extract
2/3 cup flour
1 tsp baking powder
1 tsp salt
Drain and rinse the black beans.
In a food processor, combine the oil and beans and pulse until smooth. (2-3 minutes)
Melt American Heritage Historic Chocolate Drink Mix in microwave bowl in microwave for 45 seconds, stir and repeat. Stir until smooth, set aside.
Add the eggs one at a time to the beans, pulsing the food processor briefly between each egg.
Add melted chocolate to the bean and eggs in the food processor and pulse until smooth and well blended
Transfer the chocolate and bean mixture to medium size mixing bowl
Add sugar and vanilla and mix with electric mixture until smooth, scraping down the sides of the bowl as needed.
Add flour, salt and baking powder to the black bean mixture, mix until combined.
Pour into prepared baking dish and bake 25-30 minutes, until a toothpick inserted an inch from the edge comes out almost clean. Let cool and turn out onto a cutting board.
Using a small football (or small oval) shaped cookie cutter, cut the brownies into football shapes.
Tips: I used a small can of evaporated milk to make my own football cookie cutter. Open both ends of the can with can opener. Remove paper wrapper, thoroughly clean and rinse the can and gently bend the round can into an oval shape. For an extra special touch, place ½ cup white frosting in a resealable plastic bag and cut small hole in the corner with scissor. Pipe white stitch marks on the brownies.
