This fruitcake recipes will change how you think about that notorious Christmas dessert forever!
From the Boston Cooking School Cookbook by Fannie Merritt Farmer, I found a recipe for a chocolate fruitcake. I have made a traditional fruit cake for my family and no one would eat it! This recipe is a super-rich chocolate cake loaded with cherries, raisins and walnut nuts, the perfect Christmas dessert.
Chocolate Fruit Cake
Preparation time: 25 minutes
Baking time: 50 minutes
Preheat oven: 350m degrees
Large Mixing Bowl
Round cake pan (greased and flour)
1/2 cup American Heritage Historic Chocolate Drink Mix (melted)
1 tsp. coconut oil
1/3 cup butter (room temperature)
1/4 teaspoon salt
1 cup sugar
1/2 cup cold water
11/4 cups Bread or All-purpose Flour
3 teaspoons baking powder
1 teaspoon cinnamon
1 teaspoon vanilla
1cup dried fruit or raisin (plumped)
1 cup walnut pieces
Plump Dried Fruit and Raisins. (I used the Golden Berry Blend from Trader’s Joe’s: Golden Raisins, Cherries, Cranberries and Blueberries Mix)
In small sauce pan cover dried fruit with water or cider and bring to a boil, remove from heat, cover pan and let sit for 5 minutes, drain any excess water. For microwave instruction: https://www.wikihow.com/Plump-Raisins
Melt American Heritage Chocolate Mix in small sauce pan over medium heat, Stir until melted, add one teaspoon of coconut oil and mix together. Set aside
In medium mixing bowl cream butter and sugar together
Add egg one at a time
Mix in water
Add in flour, baking powder and cinnamon
Blend in Melted American Heritage Chocolate
Remove batter from mixer and add in fruit and nuts and gently stir.
Bake in greased and floured cake pan for 50 minutes.
I’m lucky to have my grandmother’s cake pan to make the chocolate fruit cake in.
Test with a toothpick, stab the toothpick into the middle of the cake, it comes out clean, the cake is done.
Let cake cool for 15 minutes in pan before removing.
Top with a confectionary frosting
Recipe for Confectionary Frosting: 1 ½ cups of confectionary sugar, 3 tablespoons of water, milk or cream, 1/8 teaspoon salt and stir with fork. Pour over cake and let drizzle down the sides.Surprise your friends and family with an absolutely scrumptious Chocolate Fruit Cake this holiday season.
