The Holidays are here and we are all are looking through our recipes for a quick and easy holiday cookies that your friends and families will love. Last year I shared my recipe for Chocolate Rum Balls, this year, building on that theme, I have a delightful recipe for Pecan Shortbread Balls drizzled with American Heritage Chocolate. They are quick to make and in less than an hour you’ll have festive treat to add to your holiday cookie gift baskets.
Pecan Shortbread Balls Drizzled with Chocolate
1 cup (2 sticks) butter, softened
1 cup confectioners’ sugar, divided
1 tablespoon Vanilla Extract
1/2 teaspoon Ground Cinnamon
1/2 teaspoon Ground Nutmeg
1/8 teaspoon salt
2 cups flour
1 ½ cups finely chopped pecan
1/2 cup American Heritage Chocolate Drink Mix (melted)
20 minutes Prep time
15 minutes Cook time
15 minutes cooling and finishing time
To soften butter: Take the sticks of butter out of your refrigerator one half of an hour before you start. Your butter should be soft, not melted. Melted butter doesn’t blend and cream together with your other ingredients
Preheat oven to 350°F.
Beat butter in large bowl with electric mixer on medium speed until light and fluffy. Add 1/2 cup of the confectionary sugar, vanilla, cinnamon, nutmeg and salt; beat until well blended.
Stir in flour and pecans. The mixture will be crumbly but will stick to itself.
Roll and Shape into 1-inch balls (You can wet your hands to keep the dough from sticking to you.) I like to use a melon baller scoop
Place 1 inch apart on ungreased baking sheets.
Bake 15 minutes. Remove from baking sheets and place cookies on a wire racks to cool.
While your pecan balls are cooling prepare the chocolate drizzle
To make the chocolate drizzle: On stove stop in a small sauce pan, melt American Heritage Chocolate Drink over medium heat after 30 seconds the finely grated chocolate will start to melt. Stir until fully melted. Be carful not to burn the chocolate.
When the cookie balls are cool, (About 5 minutes) roll them through a bowl filled with confectionary sugar and place on piece of wax paper. Using a teaspoon, drape the cookie balls with the chocolate sauce, drizzling it over it. Let the cookie and chocolate set for 5 -10 minutes before storing them in an airtight container.
Serves: Makes 2 dozen
