It’s difficult to put an exact date when cake making and decorating began, although it is thought that the Babylonian’s taught the Egyptians the art of baking and around 700 BC the Egyptians were baking a sweet confectionery topped with sugar. By the 1600’s frosting consisted of sugar, egg whites and flavoring, which was boiled together and poured over the cake.
Today we have butter cream frosting that is rich and thick, made from butter or margarine and powdered sugar, along with flavorings and liquid. Cooked frostings are light and airy, made more like the ancient variety, using egg whites and sugar. Whipped cream frostings are rich and sweet, made from whipping cream, sugar and flavoring. Royal icing is a thick frosting, typically used as an embellishment to butter cream or whipped cream frosting decorated cakes for birthday, weddings just about every occasion and celebration. Frankly it’s hard to image enjoying a cake with out a sugary frosting.
Everyone has their own favorite frosting recipe. I have a recipe that will blend cream cheese and butter with chocolate plus our favorite new world spice, Hot Chili Pepper!
Hot and Spicy Mexican Chocolate Frosting
Small sauce pan
1 (8-ounce) package cream cheese, at room temperature
1/2 cup (1 stick) unsalted butter, at room temperature
1 tablespoon chili powder
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1 teaspoon vanilla extract
3 cups confectionery sugar, sifted
1 teaspoon coconut oil
To prepare the frosting:
Melt the American Heritage Historic Chocolate Drink and coconut oil in a small sauce pan over a med heat for 1 minute. Stir and set aside to cool.
With an electric mixer blend and cream the cream cheese and butter together thoroughly.
Add the chili power and cinnamon, mixing to incorporate.
Add the salt, vanilla, and confectioners’ sugar.
Finally, mix in the melted American Heritage Chocolate and blend thoroughly until smooth.
If additional thickening is needed, add more confectionery sugar, a little at a time, until a spreadable consistency is reached. It will Frost 24 cupcakes or a cake.
The hot chili pepper added to the American Heritage enhances the rich flavor of the chocolate without over powering it. There’s just enough spiciness to tickle the back of your throat.
